I made lots of these lemon & blueberry cupcakes last weekend and they are scrummy! Is it wrong to say that I love my own cakes and could probably eat several a day?
The recipe was from Annie's Eats, which was lots of American weights and measures and this website is very helpful when doing the conversions. I used about a third of the recommended amount of sugar in the frosting and maybe that's why it went plop and was more runny icing than frosting, but was definitely the right amount as would've been too sweet otherwise!
